Here's a dip that I make often for after-concert receptions. It's very tasty, but not so great on the arteries--which makes it a good holiday treat! This recipe makes a lot, so one can halve it, or invite people over to share!

Delicious Spinach and Artichoke Dip

2 14 oz cans of artichoke, drained and coarsely chopped
8 oz chopped, cooked spinach
1 cup mayonnaise
1 cup sour cream
3/4 cup grated cheddar cheese
1/4 cup grated parmesan cheese
3 cloves finely chopped garlic
3 Tablespoons lemon juice
salt and pepper to taste
Tabasco to taste

Preheat oven to 350
In a large bowl combine all the ingredients
Spread in to a baking dish and top with extra cheddar cheese
Bake in a 350 degree oven until browning and bubbly, around 15-20 minutes.
Serve with your favorite crackers, corn chips, or flatbread.
